What is Rice Koji?

Koji is rice that has been inoculated with Aspergillus oryzae, a beneficial mold crucial to many traditional Japanese foods. This mold initiates a fermentation process that breaks down complex carbohydrates and proteins into simpler, sweeter, and more digestible compounds. Adachi Premium Dried Rice Koji makes it easy to incorporate this powerful ingredient into your daily life.

Versatile Culinary Applications

Adachi Premium Dried Rice Koji is incredibly versatile. It is the essential base for making Shio Koji, a flavorful and tenderizing marinade for meats, fish, and vegetables. You can also use it to create Amazake, a naturally sweet and nutritious fermented rice drink, or enhance the umami complexity of homemade miso. Beyond traditional uses, it is excellent for fermenting gut-friendly pickles and adding moisture and depth to artisanal breads.

The Adachi Difference

Our commitment to quality ensures that you receive only the finest rice koji. This product is made with premium rice varieties selected for optimal flavor and fermentation potential. It is expertly cultivated under strict conditions to ensure the highest enzymatic activity and then conveniently dried for a long shelf life without sacrificing quality.

Health Benefits

Beyond its culinary applications, rice koji offers a range of potential health benefits. The enzymes produced during fermentation, including amylase, protease, and lipase, aid in the digestion of carbohydrates, proteins, and fats. This process also enhances nutrient absorption and supports a healthy gut microbiome through natural fermentation processes.
